Now that I’m trying to really take better care of myself and not fill my body with total garbage, I have made the biggest changes with breakfast.
No more sweet stuff.
Not only has this cut down on cravings for sugar, but it has changed my palate.
In my quest to find savory breakfast dishes, I came across Skinnytaste’s Breakfast BLT Salad.
But it used a soft boiled egg and I don’t really make those very often, plus I didn’t love the cold kale.
So I adapted her recipe and I have to tell you that this is one of my new favorite things.
I can’t wait to make it again tomorrow.
And it’s pretty simple.
Just sautée some kale in a pan with a teaspoon of oil.
I used bacon fat leftover from the big batch of bacon I made the other day.
That bacon fat may not be as healthy as olive oil, but um…
It was really freaking good.
And it was just a little teaspoon.
I sprinkled the kale with some Kosher salt and sauteed it until it was nice and wilted. Then I put it in a bowl.
I mixed up two teaspoons of balsamic vinegar with one teaspoon of olive oil and drizzled that over the kale.
I took two pieces of bacon from that big batch I made the other day and threw them in the pan to heat them up.
Then I made a sunnyside egg in the same pan.
I cut up half an avocado and put that on top of the kale along with about five grape tomatoes, the bacon and the egg.
And then I ate it.
The warm, balsamic-y kale and the runny egg and the tomato and bacon and avocado was SO GOOD.
Can’t wait to eat this one again!
Warm BLT Breakfast Salad
If you are looking for a satisfying and good-for-you breakfast, this is it! Full off stuff that's good for you, you're gonna wanna make this one again and again.
Ingredients
- 4 cups kale
- 1 egg
- 5-6 grape tomatoes
- 2 strips cooked bacon
- 1/2 avocado
- 1 tsp bacon grease (or any oil)
- 1 tsp olive oil
- 2 tsp balsamic vinegar
Instructions

Sprinkle 4 cups kale in 1 teaspoon bacon grease (or other oil) until very wilted.

Place kale in bowl and set aside.

Mix 2 tsp of balsamic vinegar and 1 tsp olive oil and drizzle over kale.

Fry sunny side egg in same pan you used for the kale.

Layer halved grape tomatoes, sliced avocado, egg and bacon on top of kale.

Season with salt and pepper to taste.
