Warm BLT Breakfast Salad

If you are looking for a satisfying and good-for-you breakfast, this is it!  Full off stuff that's good for you, you're gonna wanna make this one again and again.

Ingredients

  • 4 cups kale
  • 1 egg
  • 5-6 grape tomatoes
  • 2 strips cooked bacon
  • 1/2 avocado
  • 1 tsp bacon grease (or any oil)
  • 1 tsp olive oil
  • 2 tsp balsamic vinegar

Instructions

  1. Sprinkle 4 cups kale in 1 teaspoon bacon grease (or other oil) until very wilted.

  2. Place kale in bowl and set aside.

  3. Mix 2 tsp of balsamic vinegar and 1 tsp olive oil and drizzle over kale. 

  4. Fry sunny side egg in same pan you used for the kale.

  5. Layer halved grape tomatoes, sliced avocado, egg and bacon on top of kale.

  6. Season with salt and pepper to taste.

  7. Enjoy!
