Why am I only just discovering avocado toast?
I made it this morning, and it was
1) super easy and quick to make
and
2) DELICIOUS.
It was so good and easy that I might just have it again for lunch today. And dinner. And breakfast tomorrow.
In fact, I think I need to start growing my own avocados so I can eat this forever.
This is a great thing to make if you have avocados you need to use up, too.
Here’s what I had:
- 1/2 avocado
- 1 egg
- 1 slice whole wheat toast
- lemon juice
- salt & pepper
I’m wimpy in the heat department, but if you like heat in your food, you can add in some hot sauce or red pepper flakes.
Here’s what I did:
- Toast bread.
- While the bread is toasting, spray a pan with cooking spray and make sunny side up egg.
- Also while bread is toasting, mash avocado in small bowl and season with salt and pepper. Squeeze a little lemon juice on top.
- When the toast is ready, spread avocado and then put the egg on top.
- Enjoy!
That’s it! It’s super easy, and SO GOOD.

Avocado Toast
Not only is avocado delicious, but it's full of fiber and it helps raise your "good" cholesterol. Avocado toast is a great way to get in some good cholesterol and also to use up ripe avocados.
Ingredients
- 1/2 avocado
- 1 egg
- 1 slice whole wheat toast
- 1 tsp lemon juice
- salt and pepper to taste
Instructions

Toast bread.

While bread is toasting, spray pan with cooking spray and make sunny side up egg.

Mash up avocado in small bowl, squeeze in lemon juice and season with salt and pepper. Mix.

Spread toast with avocado, and top with sunny side up egg. Season egg with additional salt and pepper.

If you like more heat in your food, add a drop or two of hot sauce to your mashed avocado.
