Avocado Toast

Not only is avocado delicious, but it's full of fiber and it helps raise your "good" cholesterol. Avocado toast is a great way to get in some good cholesterol and also to use up ripe avocados.

Ingredients

  • 1/2 avocado
  • 1 egg
  • 1 slice whole wheat toast
  • 1 tsp lemon juice
  • salt and pepper to taste

Instructions

  1. Toast bread.

  2. While bread is toasting, spray pan with cooking spray and make sunny side up egg.

  3. Mash up avocado in small bowl, squeeze in lemon juice and season with salt and pepper. Mix.

  4. Spread toast with avocado, and top with sunny side up egg. Season egg with additional salt and pepper.

  5. If you like more heat in your food, add a drop or two of hot sauce to your mashed avocado.
