A couple weeks ago I asked readers for what egg dishes they served for dinner, and yesterday I tried my own version of one that was suggested by several people.
More than one reader suggested a sausage, egg and hash brown bake. But we didn’t have sausage, so I used ham instead.
It was SO EASY, and it literally had a 100% approval rating.
Here’s what you need:
- hash browns (I had a 30 oz bag, so I split it in half and made two of these)
- shredded cheddar or Mexican cheese
- ham, cut into cubes (I just cut a whole pound of deli ham into cubes. You could use any ham, or sausage, or skip this ingredient altogether).
- eggs
- milk
- salt and pepper
Here’s what you do:
Preheat oven to 350° and spray a casserole dish with oil. I used a disposable pan because I made double and was going to freeze one, and I just didn’t want to deal with washing an actual dish.
Combine hash brown, cheese, ham, milk, salt and pepper in a large bowl.
In a small bowl, lightly beat eggs.
Throw the eggs into the large bowl with the rest of the ingredients mix that shiz up.
Pour mixture into greased 9×13 casserole dish and bake at 350° for about an hour.
Makes 12-16 servings, depending on how you cut them. I made 16 servings. And they were all gone in less than an hour.

(Number 3 is a little picky. So he is often seen picking stuff deemed inedible out of his food. And for those of you who may be out of the loop, fire means awesome, amazing, and kick ass.)
This was an absolute hit and ridiculously quick and easy to throw together. Great for breakfast, lunch or dinner.

Ham, Egg, Cheese and Hashbrown Bake
This ham, egg, cheese and potato bake is so quick to assemble and will please even your pickiest of eaters. It's super easy to modify -- throw in your favorite protein and veggies -- bacon, sausage, mushrooms, peppers, spinach -- whatever! Great for breakfast, brunch, lunch or dinner!
Ingredients
- 15 oz frozen hashbrowns
- 8 oz shredded cheddar or Mexican cheese
- 10 eggs
- 1 cup milk
- 1/2 - 1 tsp salt
- pepper to taste
Instructions

Preheat oven to 350°. Spray 9x13 dish with cooking spray.

Mix hashbrowns, cheese, milk and salt in large bowl.

In small bowl, beat eggs.

Add eggs to the large bowl, mix well, and transfer to greased pan.

Bake at 350° for approximately one hour (baking time may vary).

Makes 12 - 16 servings.
