One of the challenges with eating healthy and avoiding processed and fast food is having food available to eat that you can grab fairly quickly.
This is one of my go-to lunches.
I love it, and I could eat it every day.
I start with a rotisserie chicken (I know it’s not an organic chicken and I know there are things added to Costco chickens, but it’s better than McDonalds — you can always make it even healthier by cooking your own chicken).
The rest of the ingredients are kind of to taste, depending on how you like your chicken salad.
Here’s what I used (approximate):
1 cup diced chicken
1 cup plain Greek yogurt
1/2 cup raisins
1/4 cup chopped celery
1 tsp curry powder
splash white wine
salt and pepper to taste
(I would have added some sweet onion, but I didn’t have any)
Mix those ingredients.
Serve in romaine lettuce leaves.
Delicious, and once the chicken salad is made, really quick to just spoon into the romaine (but it’s so good it probably won’t last long enough for leftovers).

Looks delicious- I’ll have to make it this weekend! One thing though, I would recommend trying to make your own chicken instead, since the store-bought rotisserie chickens can have major amounts of salt added to them!
