Baked Taco Sandwich

This recipe comes from Betty Crocker’s Good and Easy cookbook.  Everyone in this house loves when I make it for dinner.  I make a double recipe, and there is never any left over.


  • 1 pound ground beef, turkey, or chicken
  • 1 envelope taco seasoning mix (I use the mild or low-sodium)
  • I cup Bisquick
  • 1/3 cup cold water
  • 3/4 cup shredded mexican cheese
  • sour cream
  • lettuce
  • chopped tomatoes


  1. Heat oven to 450 and grease 8x8x2 square pan.
  2. Cook ground meat as directed on taco seasoning packet.
  3. Mix Bisquick and cold water until smooth.  Spread in pan, and spread meat mixture over dough.
  4. Bake uncovered 25-30 minutes or until edges are golden brown and toothpick inserted in center comes out clean.
  5. Immediately sprinkle with cheese and let stand 1-2 minutes until cheese is melted.  Serve with sour cream, lettuce, and tomatoes.
  6. Makes 4 servings.

*** I buy extra ground turkey when it is on sale for $2.49/lb and freeze it.  I also stock up on shredded cheese whenever it is on sale — last week I got it for $1.49 and sour cream was on sale for $.99.  I also got tomatoes on sale for $1.49/lb (2 for about $1.50). The Bisquick I usually have, and the lettuce was part of a 3/$5 deal.  Altogether for a double recipe (8 servings), the total I spent was $12.64 or $1.58/serving.  Not bad!
