Weeknight dinners can be a challenge with homework and practices and driving and EVERYTHING!
These quesadillas are crowd pleasers, and they are easy to make.
I always have cooked quinoa and ground turkey on hand in the freezer, so that makes them even easier to make.
When I plan to have these for dinner, I just pull a bag of frozen cooked quinoa or turkey from the freezer.
Sometimes I have these bags prepared and already seasoned with taco seasoning, but I didn’t this time.
Here’s how I made them — it’s super easy.
I have two who prefer the quinoa mixture and three who prefer the ground turkey.
I heat a large frying pan over low-medium heat and spray with oil.
While the pan is heating up, I get the quesadilla filling ready.
I mix either ground turkey or quinoa with taco seasoning , cheese, a little water and some taco sauce.
I used to layer cheese and then the meat and then more cheese on the quesadillas, and then I was like, why the heck don’t I just mix all this sh*t together?
It’s much easier and faster that way.
The mixture looks like this:
Then I put a tortilla in the pan and spread some of the filling on it.
Put tortilla on top, and spray with oil.
Let it cook for about 2 minutes. Make sure you monitor it. Your cooking time may vary. Also, I burned the shit out of one the other night when I walked away and forgot about it, and I had to throw it out.
It doesn’t take too long to cook.
When it’s nice and golden and crispy, flip it over.
Then cut it into four quarters, and serve!
You can add salsa or quacamole or sour cream or whatever your family likes.
We were running out the door to swim practice, so we kept ours plain.
They are easy to throw into a container to eat on the go.
