I’m adding this to my go-to savory breakfast menu.
It’s easy, it’s healthy, it’s a great way to use up any veggies you have, and it’s perfect to heat up and eat the next day.
I used mushrooms, onion, potatoes, red peppers, kale and bacon, but you could really use any meat and starch and vegetable.
First I sauteed the onion in some bacon drippings left over from a big batch of bacon I made.
Then I added in a cubed potato.
Next I added in a red pepper and some mushrooms.
And then some kale.
I sprinkled some salt, and sautéed it some more and then added in some precooked bacon.
Then I topped it with a couple sunny side up eggs.
Serve with a piece of whole wheat toast and enjoy!
I had this left over — which was breakfast for the following day as well as a snack for another day.
Easy Breakfast Hash
This savory breakfast hash is a great way to use up any leftover meat and veggies you have in the fridge, and it's great to heat up for a quick meal the next day.
- 1/4 onion diced
- 1 potato cubed
- 1 red bell pepper roughly diced
- 4-5 large mushrooms sliced
- 2 cups kale
- 2-3 eggs
- 4-5 strips cooked bacon
- salt and pepper to taste
Sautée onion in bacon drippings or olive oil over low heat until they begin to soften.
Add in potato. Cook for about 5 minutes.
Add in mushrooms and pepper. Sautée another five minutes, stirring occasionally.
Add in kale. Sprinkle with salt and pepper.
Add in cooked bacon and cook until bacon is heated through.
Top with sunnyside up egg, and enjoy.
Makes 2-3 servings of hash.
