Ham, Egg, Cheese and Hashbrown Bake

This ham, egg, cheese and potato bake is so quick to assemble and will please even your pickiest of eaters. It's super easy to modify -- throw in your favorite protein and veggies -- bacon, sausage, mushrooms, peppers, spinach -- whatever! Great for breakfast, brunch, lunch or dinner!

Ingredients

  • 15 oz frozen hashbrowns
  • 8 oz shredded cheddar or Mexican cheese
  • 10 eggs
  • 1 cup milk
  • 1/2 - 1 tsp salt
  • pepper to taste

Instructions

  1. Preheat oven to 350°. Spray 9x13 dish with cooking spray.

  2. Mix hashbrowns, cheese, milk and salt in large bowl.

  3. In small bowl, beat eggs.

  4. Add eggs to the large bowl, mix well, and transfer to greased pan.

  5. Bake at 350° for approximately one hour (baking time may vary).

  6. Makes 12 - 16 servings.
