I made this for lunch today.
It was super easy and delicious and it’s full of stuff that’s good for you.
So I thought you might like to try it.
You only need these four ingredients:
- Sausage (I used a roasted red pepper chicken sausage from Costco)
- Cannellini Beans
Plus (I don’t count these as ingredients — I call them pantry staples):
- olive oil
- salt and pepper to taste
If you are trying to eat healthier and would like to eat more kale but it’s not your favorite food, this is a great way to incorporate it into your diet.
I’m a wing it kind of chick, but here’s how much I used (approximately):
- 3 links sausage cut into medallions
- 4-5 cups kale
- 3/4 tsp minced garlic
- 1/2 can cannellini beans
Now here is the very complicated part of this dish:
Throw all that sh*t into and a couple tablespoons of olive oil in a semi-hot pan and sautée it for about ten minutes. Add salt and pepper to taste.
That’s about it.
It’s so easy, a five-year-old can make it.
This made enough for lunch today, and tomorrow I’ll have the rest!
