Omelettes are one of my staple dinners.
I usually mix up about 18 eggs.
I make 4 or 5 omelettes.
I reserve 1-2 cups of the eggs I mix up.
I have these little custard bowls.
I put a little olive oil in them,
And then pour in 1/4 cup of the mixed up egg.
I cover it and microwave for 45 seconds.
I make 4 or 5 of those and store them in the refrigerator.
They are the perfect size for English muffins.
The next morning, I toast up some of those,
put an egg, some cheese, and a tomato them, and nuke for 30 seconds.
Pretty quick, easy and healthy!
And no egg-y dishes to clean in the morning.
Just yummy egg sandwiches to eat!
